Helping Kids Learn through Texting

It's no secret that kids today rely on technology. For everything. Smartphones and texting are what draw and keep their attention. So why not use that to your advantage to help your child learn? With Prepcube eLearning Solution, kids from fourth grade through high school can sign up to get get daily text messages that help them learn and prepare for upcoming tests. Prepcube is a text-based study platform with educational content created to embrace kids' love of texting, rather than letting them be distracted by it. Designed by tutors, the texts cover common core ELA and math for grades 4 through 8 and prepare kids in grades 9 through 12 for the SAT, ACT and SHSAT. Elementary through Middle School Students
With the common core package, kids get a new text with a short weekly lesson each Monday. The rest of the week, they then get another text with a picture question pertaining to the lesson along with a solution via video. Texts arrive at 6 p.m. The questions can be worked through right on the smartphone. The lessons are based on the child's grade to target the appropriate level. Daily 20 minute online tutoring sessions are included with the package as well.

I took a look at video lessons in different grades and found them very straight forward and easy to understand. The tutors are clear, to the point, and illustrate exactly what they're talking about on the screen as they go through the lesson. The videos are like watching a big white board while the tutor explains everything to you. Through the videos, I was able to follow and figure out math concepts I struggled with back then (and would have no hope of remembering how to figure out now). As someone who struggled with math in school, something like this would have been so helpful for me. The videos and texts are your own portable tutor!
High School Students
For SAT, ACT and SHSAT test prep, users get daily picture questions sent at 6 p.m. to work through from their smartphone. Kids get a correct or incorrect response, along with a video explanation so they better understand the question and learn more. Additional questions are available via tablet, mobile or PC. Packages include mobile and web-based Q and A as well. Either 20 or 30 minutes of daily online tutoring with seasoned tutor is part of the package to make sure the lessons connect with your students and concepts are retained.

Stay Consistent with Studying
Since the texts are daily, Prepcube keeps kids on a consistent study pattern to better absorb information, rather than them cramming at the last minute. Kids also have access to over 1,100 questions for their exam type via instant messenger to take the learning a step further.

Parental Engagement
Parents can get engaged, too, to help their students stay on track. The texts are also a good reminder to sit down with your child for a few minutes of studying. You can work out the questions together each evening, or in the morning before school.

As I watched the videos from a parent's standpoint, it was easy to see how helpful they are for us, too. We parents can see exactly what is going on so that it's easier to help our kids figure it all out. Sort of a mini-refresher course rather than blindly trying to remember math most of us haven't done in years or figure out an easy way to explain math that's second nature to us now.

Spiced Apple Cake with Cinnamon Sugar Buttercream Frosting

It's no secret that I love baking cakes. Of all the cooking and baking I do, cakes are my favorite to create. I'd bake them more often if it didn't mean I'd have to eat it! Cake baking is reserved for special occasions and for when we're having company or going somewhere. That way, I have others to help make it disappear. A few weeks ago, we had family visiting so I took the opportunity to try a new cake and frosting. After much thought, the spiced apple cake with cinnamon sugar buttercream frosting was born. Speaking of born, today is my sister's birthday. Since she lives far away, I'm sharing this recipe today in her honor, as a virtual birthday cake.


My goal was something that was light, appley and spicey, without being too overwhelming, sweet yet not too sweet, and that screamed autumn. What I wanted was in my head so I looked at a few recipes to get an idea of what I wanted to do. Nothing matched what I imagined my cake to be, so I threw various things together and came up with this spiced apple cake. Buttercreams I always create off the top of my head (consulting with a baker friend of mine), using the basic butter/confectioners sugar/milk base. I kept it as a single layer because having a filling would make the cake too sweet and rich. The cinnamon gives the frosting a nice brown color that works well with orange sprinkles to give it the look of fall. When all is said and done, you get a spiced apple cake that isn't too heavy or cloying, has just the right amount of apple, tastes amazing, and a cinnamon sugar buttercream frosting that tops it off beautifully (and could be eaten by the spoonful itself).

Spiced Apple Cake with Cinnamon Sugar Buttercream Frosting

Prep Time: 30 minutes, plus decorating
Cook Time: 30 minutes

Ingredients (15-20 servings)
    For the Cake
    • 2 large Gala and 2 large Stayman apples, peeled and cored, three diced and one put through a food chopper
    • 2 eggs
    • 1/2 cup melted unsalted butter
    • 2 cups all-purpose flour (not cake or pastry)
    • 2 tsp baking soda
    • 1/2 tsp baking powder
    • 3 tsp ground cinnamon
    • 1.5 tsp ground nutmeg
    • 3/4 tsp salt
    • 2 cups packed light-brown sugar
    For the Frosting
    • 1 cup unsalted butter, softened (do not use margarine)
    • 1/8 tsp salt
    • 3 cups confectioners sugar
    • 1 tsp milk
    • 3 tsp ground cinnamon
    Instructions

    For the Cake
    Preheat oven to 350
    In a large bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg and salt
    In a second bowl, mix together butter, sugar and eggs on high until well combined
    Combine flour mixture to the wet mixture just until combined, don't over mix
    Fold in apples
    Spray a 9x13 pan and line with parchment paper
    Pour batter evenly in the pan
    Bake for 20 to 35 minutes, until a toothpick poked into the center of the cake comes out clean
    Let cake cool in the pan for 15 minutes, then turn it out onto a cooling rack to let it cool completely

    For the Frosting
    Combine butter, 2.5 cups of the sugar, 1.5 tsp cinnamon and salt. Beat until creamy.
    Add milk
    Beat until smooth and creamy, at least 5 minutes
    Add the remainder of the sugar and cinnamon bit by bit, tasting as you go. Stop when you reach the sweetness and spice levels you prefer. You may end up needing a bit more of either, depending on your tastes
    Frost the cake and enjoy!

      How to Easily Remove Melted Crayon from Clothes

      It's something every mom fears because we know at some point it is going to happen to us. There's no avoiding it. You're doing laundry, load after load. You're feeling good, the end to this laundry madness is in sight. Then you open the dryer and see crayon all over the inside. The huge load of kid clothes you just washed is now polka dotted and striped in the shade of whatever crayon your child snuck into a pocket and you missed when sorting. The crayon isn't just chunks, it's melted in.

      This was my weekend laundry fiasco when M2 stuffed a red and a yellow crayon into the pocket of a pair of pants. I hadn't ever even realized those tiny pockets were real, I thought they were decoration! The entire large load of her new fall and winter clothes, towels and blankets looked like McDonald's had thrown up all over them. I was freaking out. M2's must-have-or-she-screams blankets were casualties as well. There's no way we could afford to replace everything.

      Removing the Stains from the Clothes
      I read a whole bunch of suggestions online. None looked like ones I wanted to try. Hand washing the ENTIRE load in dish soap? Making an odd combination of cleaning products into a weird paste and smushing it in ALL the clothes? Dousing the stains in WD40?! Yeah, it sounded like I'd be going from one disastrous mess to another. Then I remembered I had gotten a new stain remover spray -- ESPRO Sports Cleaner. A whole unopened bottle starred back at me, beckoning me to give it a try. It's meant to be a sports cleaner, but works on other stains as well, from from mud, clay, and grease to blood stains, pet stains and baby stains. Even better, it works on any fabric -- even carpet, leather, car interiors and upholstery -- so I wouldn't have to worry about it messing up any of the stained items further. ESPRO is environmentally friendly, doesn't have harsh chemical, petroleum, butyl, phosphates, bleach, isn't chlorinated and doesn't have any other ozone depleting solvents. There's no worry about using it around kids or pets. Perfect for my crayon mess that was on clothes M2 would then be wearing. It removes odors as well.


      I took the chance and sprayed down the whole load of clothes. There were a few pieces I didn't get to because I had to use the whole bottle there were so many stains. I sprayed each stain liberally (as the bottle instructs). It also said to use the nozzle or a soft brush to rub it in, but with that many stains it took me an hour to spray everything. I cheated and skipped the rubbing part. Just spraying everything down, I was already seeing the stains loosening and fading. There was hope!

      With the spraying done, I let the ESPRO soak in for an hour. The bottle says to soak for a few minutes before washing, longer for worse stains. The ESPRO stain remover got onto other clothes I hadn't been able to spray. Next, I put it all in the washer on the highest water temperature setting for the longest amount of time on the heaviest wash cycle. I then said a prayer and crossed my fingers.
      The crayon is already starting to come off just by spraying!
      The Results
      When the washer finished, I was afraid to look. I finally bit the bullet and checked the wash. I was AMAZED. All the stains were gone. Even on pieces I hadn't gotten to and the ESPRO sport cleaner had just soaked into from others were clean. You'd never know that everything had been coated in crayon! Even the pants that were Ground Zero and the absolute worst looked like new again. The stains came out of the white towels and shirts as well. (No, I don't sort things. Please don't judge me, my laundry-washing feelings were hurt enough this week.)
      ESPRO sports cleaner is going to be my go-to stain remover from now on. It saved me from having to try crazy cleaning remedies that would have caused a huge mess and from having to replace all M2's towels and new clothes.       Best-Ever Apple Crisp

      Apple crisp is a must-have dessert for fall. The tastiness of the spiced apples, brown sugary, buttery oatmeal crumble goodness on top. Vanilla ice cream plopped on top of a hot slice, melting into the crisp to make it taste even better. Even cold, an apple crisp delights the senses and screams fall. What would Fall Recipe Week be without it?

      I have spent years (no joke) perfecting my apple crisp recipe. When the crisp doesn't have enough spices, the topping is to crunchy or browns too much while baking or it is too mushy rather than having the signature crisp the dessert should, it just doesn't taste as good. I want my crumbly topping to be crisp yet chewy with just the right amount of spices. The apples should be soft without being mushy but not too hard either and they need the right blend of sugar and spices so they're not too bland or too over powering. This recipe is the perfect balance -- hence why it is the Best-Ever Apple Crisp. I actually came upon it through accidentally leaving out the flour I usually use. That and the use of ginger along with melting half the butter are my secrets to apple crisp success. It's incredibly easy to make, too!

      Best-Ever Apple Crisp

      Prep Time: 30 minutes
      Cook Time: 30-45 minutes
      Ingredients (12 servings)
        For the Apples
        • 10 apples, peeled Preferably Macintosh, Ida Red and Staymen. 
        • If you don't have those, use a mix of three kinds you like
        • 5 Tbsp granulated sugar
        • 2.5 tsp ground cinnamon
        • 1 3/4 tsp ground nutmeg
        • 1 tsp ground ginger
        For the Topping
        • 1.5 cups quick rolled outs
        • 2 cups packed light brown sugar
        • 2 1/2 tsp ground cinnamon
        • 1/4 tsp ground nutmeg
        • 1/4 tsp ground ginger
        • 1/2 cup cold salted butter, cubed
        • 1/2 cup salted butter, melted
        Instructions
        For the Apples
        Butter bottom of a 9x13 baking dish, preferably glass
        Core and cut apples into thin slices, not thin enough to bed or see through
        Dump apples evenly in baking dish
        Sprinkle sugar evenly over apples (you may need a bit more or less depending on the tartness of the apples)
        Sprinkle spices evenly over apples
        Stir apples until they are coated evenly

        For the Topping
        Combine brown sugar, oats and spices in a bowl
        Mix until evenly blended
        Melt 1/2 cup of salted butter then stir into the oat/sugar/spice mixture
        With a pastry cutter or forks, smash 1/2 cup cold, cubed butter into the mixture until everything is even. It will be moist
        With your hands, crumble up the mixture and drop evenly over the apples
        Bake at 350 degrees for 30-45 minutes, until apples are soft and topping is starting to brown slightly
        Serve warm with vanilla ice cream or enjoy cold

        Rosemary & Garlic Pork Chops with Cranberry Quinoa

        Pork chops are a quick and easy weeknight dinner that tastes even better in the fall with homemade cinnamon applesauce to go on top.The rosemary, garlic and cinnamon compliment each other nicely to bring out each flavor. Rather than going with the traditional rice or potatoes, I like to put quinoa with pork chops. To dress the side dish up for fall and make it extra tasty, I make a cranberry version. (This would be a great Thanksgiving side as well!) A side salad finishes off the meal nicely. When all is said and done, you end up with a dinner that looks and tastes fancier than it really is.         Rosemary & Garlic Pork Chops

        Cook Time: 25 minutes

        Ingredients (6 pork chops)
        • 6 pork chops
        • 1 tsp Crushed rosemary
        • 1 tsp Garlic powder
        • Cinnamon applesauce (stop by Monday for my homemade recipe)
        Instructions
        Combine garlic and rosemary
        Sprinkle evenly over pork chops, adding more or less according to your taste preference
        Bake pork chops at 375 degrees for 25 minutes or until done
        Smother with homemade cinnamon applesauce
        Enjoy!

        Cranberry Quinoa

        Prep Time: 5 minutes
        Cook Time: 15 minutes
        Keywords: boil side low-sodium vegetarian quinoa cranberries fall winter
        Ingredients (6 servings)
        • 2 cups reduced sodium chicken broth
        • 1 cup traditional quinoa
        • 3/4 cup dried cranberries
        Instructions
        Combine reduced sodium chicken broth and traditional quinoa in a 2-quart pot
        Bring to a boil
        Cover and simmer for 10 minutes
        Dump in dried cranberries and stir
        Replace lid and simmer for an additional 5 minutes, until all water is absorbed
        Enjoy!
